Treat your self to a delicious serving of low-calorie, easy to fix Gazpacho. Serve in special glasses with some celery added for a creative flair.
1 hot house cucumber, cut in half and seeded; 2 red bell peppers, cored and seeded, 4 hot house tomatoes; 1 red onion; 3 garlic cloves, minced; 3 cups of tomato juice (or V8 juice); 1/4 cup white wine vinegar; 1/4 cup good olive oil; 1/2 tablespoon kosher salt; 1 teaspoon freshly ground black pepper – or 1 teaspoon lemon pepper (my choice).
Roughly chop everything or if you prefer, use food processor – but do not over process. I like the chunky vegetables.
Mix all together, add garlic, tomato or V8 Juice, vinegar, oil, salt and pepepr. Mix well and chill before serving. The longer gazapacho sits, the more the flavors are enhanced.
This is a low-calorie, easy to make, refreshing cold soup – if you don;t like cucumbers, try substituting with celery. Add a dash of hot sauce for a zip. Garnish with parsley, cilantro and even a dab of sour cream. Yum! Good for lunch, dinner or even a between meals snack!
